I love the holidays for so many reasons and one main reason is that I get to eat home-baked goodies!
I don’t usually cook- or bake, for that matter, but when I find a recipe that’s easy to make and difficult to mess up- I must share it!
LOOK! I even found these adorable “XOXO” napkins!
2 cups raisins and dried cherries (or other dried fruit)
2 cups walnuts and pecans, coarsely chopped
4 cups whole wheat flour
1/2 cup granulated sugar
1/2 cup brown sugar
4 teaspoons baking soda
1 teaspoon salt
4 teaspoons butter, softened
1 1/2 cups boiling water
2 teaspoons vanilla extract
2 eggs
- BOIL water.
- In a medium bowl: POUR boiling water over raisins and cherries, set aside.
- PREHEAT oven to 350 degrees.
- In a large bowl: MIX flour, sugar, baking soda, salt, butter, vanilla extract and eggs.
- ADD ingredients from the medium bowl (including any water) into the large bowl. MIX ingredients.
- Finally, ADD nuts to the large bowl.
- SPRAY baking pan.
- POUR dough into baking pan.
- BAKE for about 30-40 minutes.
