Nutty Butter Bread

I love the holidays for so many reasons and one main reason is that I get to eat home-baked goodies!

I don’t usually cook- or bake, for that matter, but when I find a recipe that’s easy to make and difficult to mess up- I must share it!

LOOK! I even found these adorable “XOXO” napkins!

2 cups raisins and dried cherries (or other dried fruit)
2 cups walnuts and pecans, coarsely chopped
4 cups whole wheat flour
1/2 cup granulated sugar
1/2 cup brown sugar
4 teaspoons baking soda
1 teaspoon salt
4 teaspoons butter, softened
1 1/2 cups boiling water
2 teaspoons vanilla extract
2 eggs

  1. BOIL water.
  2. In a medium bowl: POUR boiling water over raisins and cherries, set aside.
  3. PREHEAT oven to 350 degrees.
  4. In a large bowl: MIX flour, sugar, baking soda, salt, butter, vanilla extract and eggs.
  5. ADD ingredients from the medium bowl (including any water) into the large bowl. MIX ingredients.
  6. Finally, ADD nuts to the large bowl.
  7. SPRAY baking pan.
  8. POUR dough into baking pan.
  9. BAKE for about 30-40 minutes.

The Easiest Cranberry Sauce Recipe- EVER!

IMG_5089OMG! OMG! I love when I find an easy recipe that is fool-proof! I make this every year and it’s a hit!

16 oz. fresh cranberries

½ cup sugar

½ cup orange juice

4 tablespoons orange marmalade

pomegranate seeds (optional)

  1. Add cranberries, orange juice, sugar and pomegranate seeds to a pot on low heat.
  2. Let simmer until cranberries are soft and sauce has lost most of its liquid.
  3. Turn off the heat.
  4. Add orange marmalade and stir.
  5. Pour into desired jar.
  6. Refrigerate and serve when cooled.
